Quinoa Breakfast or Brunch Bowl Recipe

A cup of quinoa can have 10 grams of protein. Adding an egg or two to this breakfast or lunch bowl makes a healthy protein rich meal. This is a great way to use up leftover vegetables too!

My Quinoa Bowl Recipe

1 cup cooked quinoa

1 or two scrambled eggs

1 cup sautéed onions, mushrooms, kale or spinach (this can be from leftovers) along with some garlic and spices.

Roasted veggies are great in this bowl too!

I topped my bowl with some chipotle seasoning and drizzled hot sauce on top
