Easy Salad Recipes

Southwest Salad is super easy to make. Use a base of romaine lettuce. Add drained and rinsed cans of organic black beans and sweet organic corn. Chop up some tomatoes, celery, peppers, avocado and add any other veggies that go well with a southwest flavor. You can add a spicy dressing or a cilantro or lemon vinaigrette. If you are not eating a whole food plant based diet, you can add some grilled chicken or steak to this meal too. I really like the cilantro lime dressing from Primal Kitchen too.


For a sweeter salad, use a spinach base and add fresh berries, celery, avocado, dried cranberries and pumpkin seeds. If you are adding meat, grilled chicken goes well with this salad. This salad goes well with a balsamic vinaigrette.
