Vegan Hummus Sandwich Recipe

I love to make a Mediterranean style sandwich for a healthy lunch or light dinner. This is a great way to use up leftover grilled veggies too. I avoid dairy, but you can sprinkle some feta cheese on this sandwich for a real Mediterranean style meal too. You can be really creative with this sort of sandwich.
