Gluten & Dairy Free Banana Bread Recipe

My son and I have made this recipe a few times now and it is super simple and satisfying for that sweet craving. We used dairy free chocolate chips and Earth Balance vegan butter to keep this recipe gluten and dairy free. This is a simple and delicious quick bread. Enjoy!

Ingredients:
2 cups rolled oats (we used Bob’s Red Mill GF non-GMO oats)

1 tsp baking soda

1/2 tsp salt

3 ripe bananas

1/4 cup raw honey or maple syrup (we used local honey)

2 large eggs

cinnamon, vanilla, and nuts are optional (we added fall spices)

2 tbsp melted ghee, butter, or oil (we used Earth Balance soy and DF butter)

1/4 cup chocolate chips (we used Enjoy Life allergy free chocolate chips)


Makes 8 servings
Instructions:
Preheat oven 350 degrees and line or oil an 8×4 inch loaf pan. 
Place the oats and baking soda in a blender and pulse a few times, then add all the remaining ingredients except for the chocolate chips, and pulse. Stir in the chocolate chips, then pour the mixture  into your loaf pan. 
Bake for 55-60 minutes or until completely cooked. Allow bread to cool, then slice and serve.
