Dairy Free Organic Giant Gingerbread Cookies

I used the organic version of each ingredient

4 1/2 cup all purpose flour

4 tsp ground ginger

2 tsp baking soda

1 1/2 tsp cinnamon

1 tsp ground cloves

1 1/2 cups shortening (I used organic spectrum brand)

2 eggs

1/2 cup molasses

2 cups brown sugar

course or granulated sugar to coat cookie balls

1. Preheat the oven to 350 degrees. In a medium bowl stir together flour, ginger, baking soda, cinnamon, cloves and 1/4 salt. I used all organic ingredients for spices too.

2. In a large bowl, beat shortening with a mixer on medium for 30 seconds. Gradually beat in 2 cups sugar until combined, scraping the bowl as needed. Beat in eggs and molasses. Beat in flour mixture.

3. Using a 1/4 measuring cup, shape dough into 2 inch balls and roll in sugar.

4. Place 2 1/2 inches apart on ungreased cookie sheet

5. Bake until light brown and the tops are puffed for 12-14 minutes. Do not overbake for chewy cookies.
