Delicious Chicken & Potato Crock Pot Recipe (Gluten, Dairy & Egg Free)

This recipe is terrific for a fancy weekend dinner or if you are hosting a dinner and need to be out of the home for much of the day. I make this dinner on holidays when I’ll be out of the home for a special service and need to come back to a nice dinner that is almost ready to serve. This is a great dinner to prepare ahead of time and then clean the home and prep the remaining items while the dinner cooks away!

I serve this dinner with a salad or green vegetable. If your family does not need to be gluten free, then you can serve a nice warm loaf of French bread with this recipe too. I use organic items when cooking.

Ingredients needed for 4-6 servings:

1/3 cup and 3 Tbs. of gluten free flour (you can use regular flour if there is no food allergy issues)

8 bone in or boneless chicken thighs

2 tsp course salt

2 tsp paprika

6 cups quartered red potatoes

1/4 cup plus 2 Tbs olive oil

1-2 onions

2-4 garlic cloves

2 Tbs tomatoe paste

2 Tbs dijon mustard

1/2 cup white wine

1 cup chicken broth

1 tsp honey (I use local honey)

sprigs of rosemary if you enjoy that herb

Cooking instructions:

Take the gluten free flour and drench the chicken thighs in it and then sprinkle chicken with 1 tsp salt and paprika

In the crock pot, toss the washed and diced potatoes with the remaining salt and 2 Tbs olive oil

Heat 2 Tbs of oil in skilllet, brown chicken on both sides in batches. This will take about 2 minutes per side. As you finish browning one batch, put it on the potatoes in the crock pot until you have browned all the chicken. You will need to keep adding olive oil to the pan.

Heat more olive oil and saute onions and garlic cloves until they are soft and fragrant, place them on top of the chicken in the crock pot

Add remaining oil, 3 Tbs of gluten free flour and mustard to saute pan after you have finished the onions. Whisk until the flour is blended.

Remove pan from the heat and add the white wine. I like to add more wine if I have some to use up.

Return to the stove and add the chicken broth and honey whisking to blend for 3 minutes

Pour all of this sauce over the items in the crock pot. The crock pot should be layered with the potatoes on the bottom, chicken next and onions on top. The sauce goes over everything. Nestle rosemary sprigs on the side of the crock pot if you are using them.

Close crock pot lid and cook on high for 4 hours or on low for 6 hours.
